Nagoya on Japan’s Pacific coast on central Honshu is known for its majestic castle, impressive shrines and temples, and busy shopping arcade. The large city is also known for its delicious food.

To sample one of the photogenic dishes served here, head to Supa Kin for carbonara pasta. The restaurant is only a five-minute walk from Sakae Station and serves a variety of tasty pasta dishes.

On a visit with my family, we ordered dera-shiro carbonara, the shop’s signature dish, for 1,280 yen (about $9) to share. According to a restaurant employee, “dera” means super/very in the Nagoya dialect, so, the dera-shiro carbonara literally means “super white” carbonara.

After a 10-minute wait, our unique pasta dish arrived. The large black plate topped with pasta covered in a cream sauce looked like a white mountain with an egg yolk. The creamy sauce was sprinkled with black pepper and parmesan cheese. The dish was eye-catching.

After taking several photos of the delicious dish, we took our server’s advice and broke the white mountain by stirring it before sampling. While whipping it up, the cream sauce, cheese, egg and seasonings completely smothered the al-dente pasta below.

Supa Kin’s pasta is made fresh every day using a vacuum noodle-making method, which rids the dough of air during the process, giving the pasta a very springy and chewy texture. Paired with the creamy sauce, this pasta was mouth-watering and flavorful.

When you order you also have the option of substituting the spaghetti noodles for large, flat fettuccine.
