Kurobatei, owned and run by chef Yoshio Yamada, is one of the most renowned tuna restaurants in Japan.

“So much of tuna is valued as sashimi that over 35 percent of the fish goes to waste,” Yamada said. Located in an ideal tuna port town, he has challenging himself to create unique dishes using fish part that normally get discarded.

The chef’s repertoire of 200 original dishes is just as unusual as his hairdo. The menu offers entrees ranging from shashimi dishes for 3,675 yen ($37) to various plates of tuna eyeball, stomach and bone marrow.

Tuna Ago (jaw) Steak for 840 yen ($8.40) is highly recommended.
