What if the secret to a great summer meal was actually found months earlier, buried in winter snow? In Nishiwaga Town, Iwate Prefecture, the region’s heavy snowfall is being put to work preserving locally grown buckwheat for a special summer food event.
The Nishiwaga Soba Road Yukimuro Soba Festival takes place in late August, with six restaurants offering limited-time dishes made using buckwheat stored in a snow cellar.
Buckwheat harvested in Nishiwaga in 2025 has been kept in a snow storage facility in the Shigaraki area, with the cool, humid conditions helping to preserve its color, flavor, and quality through the warmer months. During the festival, it will be milled and prepared at participating restaurants, each offering its own take on the locally produced noodles.

One highlight is Rest House Yunosawa, which reopened in July as a soba specialty restaurant. It will serve a limited all-you-can-eat menu featuring the snow-aged variety for the first bowl, followed by its signature 80/20 soba. The special menu also includes pickled bracken fern and seasonal side dishes, with servings limited to 100 people.
The festival also coincides with the flowering season for Nishiwaga’s buckwheat fields, making it a chance to enjoy both the local food and countryside scenery.

Visitors who eat at participating restaurants will also receive a Nishiwaga Town Sightseeing Pass, which can be used for deals at local hot springs, tourist attractions, and food spots.
